Recipe of the Month from the Arlington Hotels Group
This month is turn of Ray the Head Chef of the George Hotel Swaffham
Taking his theme from the recent World Cup, Ray presents the national dish of South Africa, which you might be happy to learn is not fried Vuvzelas……….
“We have the following South African recipe for you to try called Bobotie, (pronounced bo-booty).
The national dish of South Africa is a delicious mixture of curried meat and fruit with a creamy golden topping, not dissimilar to moussaka.
This will generously feed four people and enough left over for a lunchbox portion the next day.” -Ray
Bobotie Recipe
Stage one
1oz butter, 1 tbsp vegetable oil, 1 medium/large onion, 1 clove garlic
Stage two
1.5 tbsp curry powder, 2oz flaked almonds, ¼ lb sultanas, ¼ tsp mixed herbs, Juice of ½ lemon, 1 tsp salt, 1 tbsp sugar, 1 tbsp white wine vinegar, ¼ tsp black pepper, 2lb best mince (needs to have low fat content).
Stage three
3 slices of thick white bread, ½ pt milk, 2 eggs beaten.
Method
Heat the oil and butter in a frying pan. Soften diced onion and crushed garlic in the oil/butter, and when cooled, in a bowl combine the mixture with all Stage 2 ingredients.
Soak the bread in the milk and then pour into a sieve reserving the milk. Mash the soaked bread with all Stage 1+2 mixture and add a little of the egg combining thoroughly, then press into a baking tray pushing down well in all the corners.
Finally mix the egg into the milk and pour this on top of the meaty mixture and bake this in a Bain Marie (if you do not have a Bain Marie, place the pie dish inside a larger dish filled with water and place in the oven). Bake in the oven for approx 30 minutes at 160 degrees (Gas Mark 3).
Serve with steamed yellow rice and extra chutney. To make the rice yellow, add a little turmeric when it is steaming. You can also add some raisins into the rice as well. Or rice and peas and a leafy green salad. Wash down with a glass of South African red wine.
Great as a main course for a dinner party, or for a family evening meal as children will like it as well.
